1 cup raw pecans
1/2 cup pitted dates (I like medjool)
1/4 cup water
4 Tablespoons raw carob
pinch of salt
Blend pecans and dates in food processor until smooth. Add the rest of the ingredients and blend. I refrigerated the mixture for about 30 minutes. Form into balls and roll in raw carob. That's it!
Seeing as how it is Lent, the sweets around here have been scarce. These delicious truffles are the perfect dessert to satisfy that sweet tooth :D. They are healthful, fresh and oh so tasty! I no guilt treat indeed!
